ധാരാളം വെള്ളം ഒഴിക്കുന്നത് ഗുണകരമല്ല. തണല്‍ സ്ഥലത്ത് നട്ടാല്‍ ഇലയുടെ ഉല്‍പാദനം കുറയും. സൂര്യപ്രകാശം നന്നായി ലഭിക്കുന്ന സ്ഥലമാണ് അനിയോജ്യം. വേഗത്തില്‍ വളരുന്ന ചെടിയാണെങ്കിലും ആദ്യ ഘട്ടത്തില്‍ വളര്‍ച്ച സാവാധാനമായിരിക്കും. 6 മാസത്തിനുള്ളില്‍ ആദ്യവിളവെടുക്കാന്‍ കഴിയും. ചായമന്‍സ വിളവെടുക്കുമ്പോള്‍ 50% ഇലകള്‍ ചെടിയില്‍ തന്നെ നിര്‍ത്തണം.
അമേരിക്കയില്‍ പ്രാചീനമായ മായന്‍ സമൂഹം കൃഷി ചെയ്തിരുന്ന ഇലക്കറിയാണ് ചായമന്‍സ. മലയാളിക്ക് അത്ര പരിചിതമല്ലാത്ത ഈ ഇലക്കറിയുടെ കൃഷിയിപ്പോള്‍ നമ്മുടെ നാട്ടിലും വ്യാപിക്കുന്നുണ്ട്. മഴയേയും വേനലിനെയും അതിജീവിച്ച് വളരാന്‍ കഴിവുന്ന ചായമന്‍സയ്ക്ക് നിരവധി ഔഷധ ഗുണങ്ങളാണുള്ളത്. മറ്റു ഇലക്കറികളില്‍ ഉള്ളതിനേക്കാള്‍ മൂന്നു മടങ്ങ് പോഷകമൂല്യം കൂടുതല്‍ ചായമന്‍സയ്ക്കുണ്ട്. ഇതിനാല്‍ ഇലക്കറികളുടെ രാജാവ് എന്നാണ് ചായമന്‍സ അറിയപ്പെടുന്നത്. പച്ച നിറത്തിലുള്ള ഇല നന്നായി വേവിച്ച് പാചകം ചെയ്തു പോഷക മൂല്യമുള്ള വിഭവങ്ങള്‍ തയാറാക്കാം.
ഗുണങ്ങള്‍
ചായമന്‍സ ലോകത്ത് പ്രചരിക്കപ്പെടുന്നത് അതില്‍ അടങ്ങിയിരിക്കുന്ന പോഷക മൂല്യത്തിന്റെ പ്രാധാന്യം കാരണമാണ്. മണ്ണിലെ നൈട്രേറ്റിനെ പ്രോട്ടീനാക്കാനുള്ള കഴിവ് ചായമന്‍സക്കുണ്ട്. പാല്‍, മുട്ട, ഇറച്ചി, പയര്‍ തുടങ്ങിയ പ്രോട്ടീന്‍ സമ്പന്നമായ എല്ലാ ഭക്ഷ്യവിഭവങ്ങളും വിലയേറിയതാണ്. വിപണിയില്‍ ഹെല്‍ത്ത് ഫുഡുകള്‍ വിറ്റഴിക്കുന്നതും പ്രോട്ടീനിന്റെ പേരിലാണ്. എന്നാല്‍ വലിയ ചെലവില്ലാത്ത വീട്ടുമുറ്റത്ത് വളര്‍ത്താവുന്ന ചെടിയാണ് ചായമന്‍സ. കാത്സ്യവും അയണും വിറ്റാമിന്‍ എയും വിറ്റാമിന്‍ സിയുമാണ് ചായമന്‍സയിലെ മറ്റു പ്രധാന പോഷകങ്ങള്‍.
നട്ടുവളര്‍ത്താം

രോഗകീട ബാധ
രോഗകീട ബാധ വളരെകുറിവാണ് ചായമന്‍സയ്ക്ക്. എല്ലാ തരംജൈവ വളങ്ങളും ഉപയോഗിക്കാം, ചാണകം, വെണ്ണീര്, പച്ചിലകമ്പോസ്റ്റ് എന്നിവ ചെറുതായി തടം തുറന്ന് ഇട്ടുകൊടുക്കുന്നത് നല്ല തളില്‍ ഇലകള്‍ ഉണ്ടാകാന്‍ സഹായിക്കും. വേനല്‍ക്കാലത്തും ചായമന്‍സ ഇലയുടെ ഉല്‍പാദനം കുറയുന്നില്ല. പ്രത്യേകിച്ച് വളപ്രയോഗം ആവശ്യമില്ല. ചെടിയുടെ ചുവട്ടില്‍ നിന്നും ഒരു മീറ്റര്‍ അകലത്തില്‍ ഒരു ചെറിയ കുഴി തയ്യാറാക്കി ജൈവമാലിന്യം നിക്ഷേപിച്ചാല്‍ അത് ഒരു മാലിന്യ സംസ്‌കരണ സംവിധാനമാകും. ചായമന്‍സക്ക് ആവശ്യമായ വളവും അവിടെ നിന്ന് ലഭിക്കും. ജൈവമാലിന്യങ്ങള്‍ വേഗത്തില്‍ വിഘടിക്കാന്‍ കമ്പോസ്റ്റിംഗ് പക്രിയയില്‍ ചായമന്‍സ ഇലകള്‍ ഇടുന്ന രീതി അമേരിക്കയിലുണ്ട്. എന്നാല്‍ കേരളത്തില്‍ വലിയ പ്രചാരം ഈ ഇലക്കറിക്ക് ലഭിച്ചിട്ടില്ല.
ചായമന്‍സ വിഭവങ്ങള്‍
ചായമന്‍സ പാചകം ചെയ്തു മാത്രമേ ഉപയോഗിക്കാവൂ. ഇതിലടങ്ങിയിരിക്കുന്ന ഹൈഡ്രോസൈനിക് ഗ്ലൂക്കോസൈഡി ചൂടുകൊടുക്കുമ്പോള്‍ മാത്രമേ നഷ്ടപ്പെടുകയുള്ളൂ. പാചകം ചെയ്യാന്‍ അലൂമിനിയം മാത്രം ഒഴിവാക്കുന്നതും തുറന്ന പാത്രത്തില്‍ പാചകം ചെയ്യുന്നതും കൂടുതല്‍ ഉത്തമം. ചായമന്‍സ തണ്ട് മുറിക്കുമ്പോള്‍ വരുന്ന വെള്ളക്കറ (പാല്‍) കൈയില്‍ പുരണ്ടാല്‍ കഴുകാന്‍ ശ്രദ്ധിക്കുക. മറ്റ് ഇലക്കറികള്‍ പാചകം ചെയ്യുന്നത് പോലെ ഓരോ വീട്ടിലേയും രുചിക്കനുസരിച്ച് ഉപ്പേരി, മെഴുക്ക് പുരട്ടി എന്നിവ ഉണ്ടാക്കാം. കറിവേപ്പിലക്ക് പകരവും ചായമന്‍സ ഇലകള്‍ ഉപയോഗിക്കാം. ചായമന്‍സയുടെ ഗുണങ്ങള്‍ മനസിലാക്കി കേരളത്തില്‍ പല നഴ്‌സറികളിലും ഇതിന്റെ തൈ മുളപ്പിച്ച് വിതരണം ചെയ്തുവരുന്നു.
